Its aromatic profile features white and stone fruits (apple and peach) layered with delicate brioche, floral nuances, and a touch of almond. On the palate, the fine mousse gives a festive, crisp attack, balanced by underlying minerality and vibrant acidity. The 36 months aging brings textural richness and hints of toasted, dried fruit on the finish, making it both refreshing and elegantly complex. Pairs well with smoked salmon.
