It is a refined, organically farmed Chardonnay from clay‑granite hills in Villemontais. Hand‑harvested and wild‑fermented in large 500 L barrels and foudres, it undergoes 11 months of ageing without new oak, showcasing a subtle, well‑integrated wood character. The wine is ripe yet precise: aromas of white peach, Comice pear, acacia flowers, and a fine hint of goat leaf rise from the glass. On the palate, it combines a round, mouth‑coating texture with vibrant freshness and subtle mineral tension. The finish is long, elegant, and balanced. A gastronomic white that shines with seafood, creamy poultry dishes, and soft cheeses; beautiful to enjoy now or cellar over the next 5–10 years. Pairs amazingly with scallops.
