Jérémie Huchet is a passionate advocate for the Crus of Muscadet. “Melon de Bourgogne is a subtle grape variety,” he told us, “so it leaves room for the expression of the unique terroir in which it is cultivated.” 

Fine cru Muscadet, bottled after 37 months on its fine yeast lees.  With this communal vintage, Jérémie Huchet demonstrates his talent for letting the origins of his wines speak for themselves! This wine has beautiful aromas of citrus fruits, vanilla (no wood!), followed by a rich, full-bodied, crystalline palate that lingers with great finesse and freshness. It's fantastic.

Born of a union in 1996 (Domaine de Saint‑Just & Château de Brézé) and crafted by one of Saumur’s most esteemed organic winemakers, this 2023 Saumur “Midi” is fermented in stainless steel with indigenous yeasts and aged 90% in tank, 10% in old oak for four months. On the nose, it offers delicate white flowers, lime blossom, and quince. The palate is crisp and precise, unfiltered yet refined, delivering bright citrus and green apple flavors, lifted by vibrant acidity and a saline-edged, minerally finish. Best with fish. 

This cuvée hails from a southern-exposed clay–limestone terroir in Sancerre and is an elegant showcase of classic Sauvignon Blanc. On the nose, it balances discreet aromas of ripe fruits—ripe citrus, pear, and hints of white flowers—with a hint of stony minerality. The palate is linear and refined, delivering pure citrus zest, white fruit flavors, and a saline-mineral finish that lingers with precision and freshness . Fermented with native yeasts and aged one year on the lees in stainless steel, the wine offers length, structure, and finesse, with a beautifully clean and intense profile. Best paired with dry goat cheese.

The 2022 Vouvray "Les Enfers" from Domaine Mathieu Cosme reveals delicate aromas of pear, peach, and white flowers, expressing floral elegance and fresh fruit character. On the palate, the wine is rich and voluminous with a fine minerality and a hint of spice, balancing freshness and texture beautifully. Made from old vines grown on limestone-rich soils, it benefits from natural fermentation and aging in French oak barrels, adding complexity and subtle oak nuances. Best paired with mussels.
