This 2023 vintage seduces with its perfect balance between aromatic richness and mineral finesse. After harvesting, the grapes are transported by gravity to the pneumatic presses. Pressing is a long and slow process to ensure gentle extraction of the juice and preserve its aromatic finesse. The must obtained is cooled and decanted. Fermentation takes place exclusively in barrels (20% in 600-liter demi-muids, less than 10% new wood).
Notes of white-fleshed fruits, enhanced by a touch of honey and hazelnut, blossom on the palate, which is silky and persistent. A cuvée that elegantly embodies the authenticity of Pouilly-Fuissé.
