“Les Romains” is sourced from one of Sancerre’s sunniest parcels—so much so that the cuvée takes its name from an ancient Roman path that runs beneath the vines. The vineyards are farmed biodynamically, with late harvesting, direct pneumatic pressing, and natural fermentation using indigenous yeasts. The wine is aged on lees in concrete eggs for one year, then finished in stainless steel for another year. On the nose, it offers a vibrant, mineral-driven profile with notes of citrus zest, white flowers, and a hint of salinity. The palate is fresh and precise, with a saline-lively attack and a more rounded, creamy finish, providing excellent tension and purity. Best with oysters.
