This wine is crafted from 50-year-old vines meticulously tended by draught horses, emphasizing traditional, sustainable viticulture. The grapes undergo 50% whole bunch vinification, contributing to the wine’s aromatic complexity and structure. It has a deep, intense color, reflective of the low yields typical of this cru. On the nose, dominant aromas of blackberryare complemented by roasted almond, cigar, and floral notes of rose and jasmine, typical of whole bunch fermentation. The palate is long and straightforward, with a sapid, chalky finish that appeals to lovers of Burgundy wines that offer structure without harshness. Best paired with quail.
