Born of a union in 1996 (Domaine de Saint‑Just & Château de Brézé) and crafted by one of Saumur’s most esteemed organic winemakers, this 2023 Saumur “Midi” is fermented in stainless steel with indigenous yeasts and aged 90% in tank, 10% in old oak for four months. On the nose, it offers delicate white flowers, lime blossom, and quince. The palate is crisp and precise, unfiltered yet refined, delivering bright citrus and green apple flavors, lifted by vibrant acidity and a saline-edged, minerally finish. Best with fish.
